Lunchinspiratie: vegetarian sandwich

Vegetarian food: all well and good, but what lubricate you than in the hell on your sandwich? We will gladly give you some inspiration, because there are (easy) plenty of options.

Today is Day Without Meat started. Do you want your contribute to a smaller ecological footprint, but have no meaning to each day of cheese on your sandwich? Then you have but to choose from these tasty spreads:

Mexican sandwich

Most shops sell guacamole, but did you know that it is also not at all difficult to take the avocadospread? If you have a good blender in your home, take even ten minutes to complete. For a bit more bite, place some tomato slices and corn (from a can) in between your sandwiches.

Herb cheese

Also, herb cheese, you have in all flavours and colours in the stores, but the fresh bread is easy to make. Cut parsley, spring onions and chives finely and mix it together with some pepper and salt under a cream cheese of your choice. Ready.

What can a sandwich with mozzarella, tomato and basil make them even better? We know: homemade pesto! You have that with a food processor ready for you buon appetito can say. How you do that, you can see in this video (but as I said: throw everything at ease in a blender if you are in a hurry, instead of all fine cut).

Middle-Eastern tinted

Baba ganoush is a delicious puree of eggplant, flavored with garlic, tahini and mint. This mixture, along with some salad or roasted peppers on your sandwich, is capable of many colleagues jealous during the lunch break.

Wish you got some inspiration from the Middle East? Humus is not only delicious, but also easy to make. In addition, there are very nice variations imaginable.

Leave 125 g of walnuts for at least 4 hours. Mix them in a standmixer with 200 g pitted black olives, a handful of fresh parsley, a twist of fresh pepper and two tablespoons of olive oil. Olives are naturally quite salty, so taste first moment of the mixture for you also salt to add.

The opportunities for groentespreads to create are literally endless. A tip, some extra seasonings, and a blender should be enough for a delicious (and healthy) lunch.

Do you have a leftover roasted pumpkin? Puree that with a little ricotta and sage and you get a creamy, almost sweet spread.

There was zucchini on the menu? Blend it with a good amount of tahinpasta, a geutje olive oil, a squeeze of lemon juice, a clove of garlic and some salt.

The braised leeks ‘t he? Along with some goat cheese and thyme transform you into a delicious sandwich.

Cost of your siege you too much time or effort? Then you will find probably what you are looking for in your regular supermarket. A lot of shops to offer vegetarian sandwich, only it is not always called so. Go take a look at the tapas section: betting that at least a few types of spreads between which you have to toast lubricates, but which you had not yet thought of as the about your lunch?
