“You have anyway more passers-by a pleasant terrace to see and decide something to eat or drink. In the winter, is that spontaneity is much less and it is more difficult for people to get inside. Though it is not always positive: during the first warm days, you will notice that people are also a glass of the more dare to drink. I’m not necessarily about people who are on our terrace, but about the people living on the street wiggling with a six-pack of beer in their hands. They’ll see a patio and want something to drink, which is not always enjoyable.’

Regular customers like family

“During the summer there are also less regular customers and more tourists’, compares Jonas Hubin (32). Together with two friends, benefit he the coffee shop Revista on ‘t Zuid in Antwerp. “The expectations of tourists are often higher because they are on the case have read in a book or on a website. ‘It remains, however, always nice to have a familiar face to see. Recently had a new co-worker is amazed on how well we eat – and drankgewoontes of our regular customers know. Also on busy days, I always try to make time for a short chat with them. Without that you always understand, they are after all a part of your life because you made them see more than the average family member. (laughs) That makes the job fun, because it always leads to interesting conversations.’

The crowds through the summer months is Jonas hard to estimate. “Over the years a much clearer picture about when the pressure is going to be and when not. In the summer months is very unclear. You can have a day where you barely people expected by worse or changeable weather. And then, suddenly, yet full and can be difficult to follow. The opposite can also. So I had it for the past months are actually much busier expected due to the good weather.’

“Sometimes you will work shifts of sixteen à seventeen hours. That is heavy, but since I already had since my sixteenth in hospitality work, I am used to it’, smiles Jonas. “I can imagine that not everybody is the case. Even my girlfriend who me and, occasionally, assist and also for many years in the hospitality industry has worked, should be back to adjust as they will help.”

Because hard work also to vacation requests, the Revista operator in July for two weeks to Croatia. ‘Self go on vacation during the summer did the other owners and up to now I always,” explains Jonas. ‘This is one of my colleagues, for example, a month on vacation. For the next few years, we agreed that that otherwise, will have. It is not recommended for a very long time to stay away. On busy days, do you still end up best in your case.’

While the Antwerp coffee bar throughout the summer will remain, decided Michiel and his colleagues to Whale every summer for two weeks to close. ‘That is not self-evident, but it certainly works for our case. If you are not open, of course you will have no expenses. The entire team tries within two weeks to do his thing. Why in the high season?’ Michael repeats the question quietly. ‘Because we are in a residential area, sit down, we notice that everything here in July and August a bit of stalling. A lot of people are on holiday. September is therefore also our busiest month, because everyone back at the corridor seems to come.’

Working in the hospitality industry is often underestimated, know Jonas to tell. ‘It seems so basic that you simply have to serve, would and take orders. But you must do it all at the same time be able to do. People don’t realize how hectic it can be. You are in the hospitality industry with a plethora of staff.’ It seems as if he is a chuckle. ‘The combination of multitasking and light chaos makes happy also for funny moments between the staff.’

What Michiel difficult tip mentions, is that people are increasingly having their reservations forsake. “We have already a few times that a group does not show up. People underestimate the consequences of. You have staff ready and waiting, you do your purchases, depending on the reservations … If there is then all of a sudden a large table drops, you can feel that well, ” sighs the entrepreneur. “I think it’s a tricky evolution. We always ask for a phone number so that we they can always call, but I usually do not. You know those people are not going to come, and then you also want to not go into discussion.’

‘Now, I’ve already done it!’, admits Michael. “There pinging something or something happens which makes you sometimes forget to call. The good weather has certainly to do with it. People continue to long to paste on another terrace, and everyone is nonchalanter. From now on, people can then also only within a reservation because we terrace not needlessly want to keep clear. First come, First serve.’
