FERM: Brand new Bio and Food Market in Keerbergen

A brand new concept opens its doors in Keerbergen: Ferm, a hip organic restaurant with take away, patisserie and retail market around healthy organic food.

Fresh, hip, healthy, honest and social, the keywords that the brand new concept sends out are gratifying. Firm has its home in a former butcher’s shop in the Flemish-Brabant municipality of Keerbergen, was with taste redecorated by the Antwerp design studio Pinkeye and provides space for an organic restaurant with 50 places (and terrace in the summer), a take-away and a retail market. Saturday, march 5, the doors will open for the general public.

Early birds can starting in the morning a biological breakfast, think: home-made granola, ‘Eggs Benedict’ or ‘buckwheat pancakes. During lunch time you can the kitchen of the Italian ladychef Cristina Guidalini discover. Of course, specialties from the country of the boot, but the card also mentions dishes with worldly influences. Both vegetarian dishes, fish or meat dishes, such as salads.

Guidalini went to school in their own country, but travelled afterwards around the world to culinary experience. ‘Understand me wrong, I am proud of the achievements of the Italian kitchen but there is in the world, more than that,” she says. One certitude: all the ingredients she works with are certified organic with a few exceptions such as wild-caught fish from sustainable fisheries. And the bar is set high: “My goal is as simple as it is sincere. I want my guests at the table, stop talking when they of my dishes. The only thing I actually want to hear their comments about what I serve.’

There is also an extensive drinks menu, and also everything here is organic what-the-clock stores: organic tea to organic beers, organic wines, and even biolimonade.

If you prefer home cooking, in the space of the racks, a protein skimmer, and the bag filling with all kinds of products, or ready-made dishes from the take-away.

Firm, full with the additive Bio Food & Market, is the initiative of Yves The Baker, coming from a horecafamilie, and Patricia Silverans, gezondheidsconsulente and as a volunteer, active in the non-profit organization, buy-a-smile that in many domains, interacts with the concept. They are both passionate about pure and healthy foods, resulting in a firm project. (DB)
