Chef Yannick Van Aeken (ex-Noma) opens restaurant in the heart of Brussels

Chef Yannick Van Aeken, ex sous-chef of Noma, and his business partner Glen Ramaekers open in the heart of Brussels restaurant Humphrey, where everything in the context of food sharing in a casual atmosphere. A new address to look forward to.

On Monday, February 29, swing open the doors of the brand new restaurant in Brussels, with the sounding name Humphrey, a nod to the famous actor Humphrey Bogart (and the quote ‘Play It Again Sam’ from the film classic ‘Casablanca’). The new restaurant is in the building of the independent record label PIAS, near the comic strip museum.

Behind the stove is chef Yannick Van Aeken, in a previous culinary life still working in the Basque Atxondo (the best grill restaurant of the world) and sous-chef of top restaurant Noma in Denmark.

After a few pop-uprestaurants in Ireland, Japan, Antwerp, Brussels and Beersel start of the thirty years ‘ Boischottenaar with a new, own project for which he is in the sea with a soul mate and business partner, Glen Ramaekers.

At Humpfrey, you don’t gerchten as in Noma expect, due to not feasible (the restaurant has about fifty chefs in the service). Furthermore, it is also not in the style of the chef. Yannick wants in his new case to do what he wants, and that now sounds all tasty.

‘Everything revolves around freedom and good food to share in a casual atmosphere. The concept is accessible to a wide audience and gives us the opportunity to in a variety of ways with a variety of products to cook, ” he says in Knack Weekend.

“Of course, I prefer to use sustainable and ecological products, but Humphrey should not be labelled as an ‘organic’ restaurant. I like to work with local products, but to get there does not, otherwise I may not have avocado more ! I want to go with the products work that appeal to me and will continue to look for the right suppliers. Also my way of cooking will continue to evolve.’

Expect a kitchen that is closely aligned to the Brussels gastronomy, but with worldly, Asian influences. The food will be a twenty or so small dishes (arranged in five taste profiles), which contain the middle of the table and are meant to be shared. ‘Who unbound atmosphere through the sharing of food is created, I find very important,” he says.

A part of the ingredients are grown in the courtyard of the restaurant. There are also four craft huisbieren available, specially for Humphrey to be brewed in small breweries.

The case offers space for 35 persons. At the bar you can enjoy an aperitif or cocktail. And until 11 pm you can enjoy a nice breakfast.

Also important: the music. This is the restaurant at the source, to PIAS.

Horecagoeroe Frédéric Nicolay, who for more than twenty years Brussels ‘ café’s and restaurants of a trendy interior provides (think another more Bonsoir Clara, Café Belga, Bar Du Matin) signed to the distinctive décor, with lots of wood in combination with green hues.

On 29 February, the doors will open, but table reservations can be made now already. (DB)
