Chef José Pizarro is falling in love with the Catalan kitchen: ‘Food with a nod to the past’

In this excerpt of his cookbook, The cuisine of Catalonia explains the Spanish chef José Pizarro out why the region’s culinary heart has been stolen. “They have their roots and never denied.’

Catalonia is especially beautiful. I am there in the course of the years very often and one thing I know for sure: the more often I come here, the more I have of this region and its inhabitants go. During the research for my book I’m more and more familiar with the rich variety of animals on the land, the fascinating life in the sea and the magnificent birds in the air. In The cuisine of Catalonia, I want to a number of gastronomic specialties from the region to share with you, because the real culinary gems are, and because food is now turn to share.

I am of Roses in Girona to Balaguer in Lleida traveled from Vilafranca del Penedès in Barcelona to Sant Carles de la Ràpita in Tarragona. During those trips, I have old friends searched, but also meet new people and made new friends, and they all have fun their house and their heart to me opened up. While I culinary secrets are unraveled (not all of them, of course!), I discovered and learnt about the cities, towns and villages.

In the Catalan cuisine, you can find often a nod to the past and I love it. What they eat, you can see that the Catalans are particularly proud of their heritage and their cultural identity, and that they maintain who they are and where they come from.

It is a lovely way to experience the history and culture of a people on a board to bring to life, and these traditional recipes back to others by playing, in the confidence that these chefs and their guests also will taste the love for cooking, which the courts are really aware.

So I have a variety of old and new recipes gathered on the basis of the ingredients that I came across in the crystal clear waters and the lush green mountains of Catalonia. I want to feel transfer that I was in Catalonia experience thanks to the wonderful people and enchanting places. It was a privilege to have this culinary adventures to experience. I have enjoyed every minute of it. I hope that you, like me, the cuisine of Catalonia is in your heart will close.
